Traditionally Vietnamese Goi Cuon  are made using seafood or pork, but these vegetarian ones are gaining great popularity world over, specially as the summer months approach. These are time-consuming, but worth it, so enlist some help while assembling these little babies. You won’t regret it.
Adapted from Easy Vegetarian, makes 12.
Ingredients:
                   1.            12 rice paper wrappers such as these
                   2.            2 carrots, cut into matchsticks
                   3.            2 spring onions, cut into matchsticks
                   4.            75g bean sprouts
                   5.            1/4th cup Thai basil leaves
                   6.            A bunch of watercress
                   7.            1 tbs toasted sesame seeds
Dipping Soy And/Or Sweet Chilli Sauce:
                   8.            2 tbs honey
                   9.            1 tbs soy sauce
               10.            1 tbs teriyaki sauce
               11.            1 red chilli, finely sliced
Method:
                   1.            Soak the wrappers as per package instructions.
                   2.            Gather all the ingredients and place a cluster in the middle of each softened wrapper.
                   3.            Sprinkle with the sesame seeds and roll.
                   4.            To make the dipping sauce, mix all the ingredients and serve in a shallow bowl.
 Feedback:
                   1.            It’s not easy to find the freshest of fresh ingredients, so make this when you know you have some good quality raw ingredients!
                   2.            I loved these rolls with the sweet chilli sauce way more that the dipping soy.
                   3.            Replace with any other fillings you have!
