Lemon Almond Yoghurt Cake

In the Covid-19 haze, I don’t know what inspiration hit me to decide to do a lemon cake. Possibly the overkill of banana breads spreading over my Instagram feed made it a little bit of a cringe-worthy feel to bake that. I do appreciate the need to use up bananas that are a bit too mushy for anything else – but there’s great other options for bananas. Here are some of my staples:

1. Slice and freeze bananas to use in oats, smoothies, parfaits or any other breakfast or snack concoction.
2. Freeze and blend with good quality cocoa powder for amazing nice cream. I always have a batch in my freezer for those midnight sweet cravings during our non stop Netflix and eat sessions.
3. Banana oat pancakes with cinnamon vanilla and a splash of almond milk – greatest breakfast or treat for all ages (including my 9 month old!) Read more…

Breakfast Banana Muffins with Coffee-Chocolate Chunks, Hazelnuts and Oats

The last weekend has been a busy busy but fantastic one. It started with a day dedicated to cooking and baking and making everything look pretty and yet relaxed. My idea of entertainment involves very little effort once the guests arrive, I prefer everything to be laid out and let the guests have a little fun DIY-ing and playing around with different stuff, that may to may not work well together. But that’s all the fun! There was: mango feta crostini with red wine fleur de sel, paprika spiked hummus, valrhona cointreau cupcakes, layered lemon cake with lemon cream cheese topped with fresh cranberries and gaufres shards, as well as some mini-mosaic apple tarts. It was quite a day night! And, of course, when at 2am this and this (the British version, of course!) makes a debut, you know the entertainment has taken the best possible turn!

With a Friday like that, even the best of us couldn’t rise and shine from the wee hours into a domestic diva. The thing is, I love the idea of grabbing a weekend (or any day, really) breakfast/brunch/late lunch comprising of breakfast favourites. I love the concept of brinner too (breakfast for dinner, get with the lingo!). The only part which tends to evade this achievement is the fact that it’s usually in the morning, and mornings and me haven’t become quite that friendly yet. That’s kind of how I stumbled upon the idea of making Breakfast Banana Muffins with Coffee-Chocolate Chunks, Hazelnuts and Oats the previous day, so I wouldn’t have to rise and shine early (eek!) to made a hot breakfast treat, I’d just drizzle it with some homemade warm salted caramel, and breakfast is served!  Read more…

Umami Chickpea Open-Face Sandwiches

That pleasant and almost delicious savoury taste that embodies umami is exactly what elevates this humble protein packed lunch into the fantastic Umami Chickpea Open-Face Sandwiches. And might I add, incredibly quick and easy to whip up! The fundamental steps are: go purchase a gorgeous loaf of bread, sourdough and seed speckled works wonderfully, no doubt. And second, either soak some chickpeas in water overnight, or have a can of organic chickpeas handy.

Most of the work is done by the food processor – all I had to do was add the ingredients and press the button! My kind of cooking 🙂 For a textural contrast to the creamy chickpea mixture, I garnished the sandwiches with a crunchy and spicy addition – some mortar and pestle pounded sriracha peanuts…

Brown Butter Cinnamon Bun Pie

Yeah, each of those words are poetry.

I mean there’s butter, and then there’s BROWN butter. Two very very amazing but very different beauties. Cinnamon Buns are always a winner. {yeah, i don’t get people who don’t like cinnamon. I’m not judging or anything. I just don’t get it, wierdos.} And there’s the best 3 letter word -P-I-E. How in god’s name could anyone not drool or salivate or just clog an artery after hearing Brown Butter Cinnamon Bun Pie.

I could say it again and again.

And again.

Brown Butter Cinnamon Bun Pie.

So let me just start by saying, this one is easier eaten than made. I mean, I didn’t really have an option, because either I fly to NYC to have a slice, or make some at home. Budget demanded I make it at home. I personally would have preferred the former. Just saying, in case my logic seemed fuzzy. {I’m pretty sure the immigration officer would think I’m on crack (pie) if I shared my rationale for a quick weekend trip to the big apple}

But seriously. I would make this again and again, not because it was easy (it’s really NOT), but purely because the house smelled un-naturally unbelievable. Like WOW. And to be fair, each bite-ful did taste pretty dam awesome. Read more…

Easter Special: Hot Cross Buns

Let me be frightfully honest, Easter is nothing more than a blatant excuse for me to bake, yet again. And taking on the challenge of baking bread instead of cake did make me fearful at first. To a lot of my readers I may seem like this meticulous patient person who plans and organises her […] Read more…

Quick Fix: Vanilla Chai Scones with Honey Butter

Things have been extremely chaotic on my end. So much so that I completely overlooked that 4 years are almost over, and that celebration too will need to be put on hold, courtesy the sheer and ardent frenzy that has suddenly taken over my life. Silver lining? Ten whole days outside of this city, first […] Read more…
