Sounds insanely comforting. And it is, with a steaming cappuccino, purely heavenly. I’ve never baked banana breads before, let alone any kind of bread. This is more of a cakey recipe, than bready. And the coffee just adds a tinge of maturity to the bread, hardly giving a whiff of the caffeine content (or maybe should have used a better blend!).
I readied the batter while my mum dashed out to buy the bananas. Mix together the sifted flour, baking soda, baking powder and salt. In a separate bowl mix the butter with the vanilla and flax seed mix. 
Patiently add the dry ingredients while mixing together the batter and mix in the coffee. Lastly- add the mashed bananas (mash with a potato masher as shown in image). 
Pour into greased loaf pan and bake for 1 hour in a preheated oven on 175*c. once done, let it cool in the pan after which carefully remove and transfer it to wire rack.
Ingredients:

1 1/2 cups all purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
a pinch of salt
1 cup sugar
1/4 cup butter
1 teaspoon flax seed powder mixed with 1/4 cup water
I vanilla pod
1 cup fresh brewed coffee
1 cup mashed bananas
