I forgot to eat my fruit yesterday and forgot to make the raita with dinner which i had anticipated and hence put the yoghurt to separate from the excess water in the morning. Result? Mango Yogurt Crunch. This quick fix and original culinary feat was delightful! A spin off from my Very Berry Yogurt Cup. Easy as hell— line a transparent pot/wide glass with inch big pieces of one mango at the bottom, pour over ½ cup of thick yogurt (Greek is best) and finish with cereal of choice, or even muesli! That’s it! Best alternative to evening time fruit, no added sugar, and great to carry with you!
Ingredients:
1.       1 small mango
2.       ½ cup yogurt (thick/Greek)
3.       ½ cup cereal
Method:
1.       Layer the diced mango at the bottom of the container.
2.       Add the thick yoghurt and let it settle onto the mango, without leaving gaps.
3.       Sprinkle over the cereal to coat the top and add more if desired!
