So much so that I completely overlooked that 4 years are almost over, and that celebration too will need to be put on hold, courtesy the sheer and ardent frenzy that has suddenly taken over my life. Silver lining? Ten whole days outside of this city, first in the capital to celebrate weddings of our nearest and dearest, followed by sun and sand in Goa for a whole week (including another set of nuptials!). Yippee!

Sometimes (especially in these times), shortcuts are good great. I received this scone mix package last summer, and since then it has been lost and found several times in the manic yet organised mess that is my baking cabinet. Oddly, despite it being overflowing, I can manage to manoeuvre the requisite tools for the day without disrupting the chaos they dwell in. Im desperately looking forward to more space soon, where all can be beautifully laid out and arranged, adding to the joy of cooking. I cannot cook in a messy kitchen. My favoured time to get my hands dirty, are smack in the middle of the day – after lunch and before the evening planning begins. It gives me space, time, and a peaceful respite to be able to enjoy the process, making it almost therapeutic. On the days that everything is cleaned out, this is often the result.

They are the penultimate definition of English baked goods (the crumpet being the ultimate). [Ahhh crumpets. With butter and honey, or butter and powdered chilli. Heaven.] 

I have to literally go back to the title to remind myself that this post isn’t about melting butter on toasted crumpets or freshly ground peanuts in salad, but about these easy peasy scones made out of a packet  – healthy, no butter, no fuss. All you do is use a fork and mix together the contents with water, resulting in a craggy dough.

Having an adorable dragonfly embossed butter holder didn’t hurt either. If you can’t get your hands on the same or similar variety of scone mix, you can give making it from scratch a shot- it is actually pretty straightforward and quick, as scones don’t need yeast. This recipe looks pretty darn good!

Come to think of it, I think I may give it a go myself pretty soon.

Ingredients
  1. 4 tbs salted butter, softened
  2. 2 tbs good quality honey
  3. 1/2 tsp cinnamon powder
  4. 1/2 tsp vanilla extract (optional)
Instructions
  1. Mix together all the ingredients and leave to set in the refrigerator for 30 minutes.
  2. Serve over any freshly baked breads or toast.
