Baby Beet and Goats Cheese Salad with Walnuts and Baby Spinach

Baby Beet and Goats Cheese Salad with Walnuts and Baby Spinach


Ingredients:

  1. 2 boxes baby beets, pressure cooked/baked till tender (Available at Natures Basket)
  2. 1 box baby spinach, washed and spun in a salad spinner (Available at Natures Basket)
  3. 50gm crumbly goats cheese
  4. 1 tbs balsamic vinegar
  5. 1 tbs extra virgin olive oil
  6. 1 tsp honey mustard
  7. 1 tbs red wine vinegar
  8. Coarse pepper and sea salt, to taste
Method:
  1. Mix together the dressing ingredients (items 4-8). From the mix, toss the spinach with 2 tbs of the dressing. Mix the remaining dressing with the baby beets.
  2. Arrange a platter with the spinach. Layer over the halved baby beets, crumble cheese and walnuts. Enjoy!
