- Bring out your gloves prep this wonderfully easy and heart warming Baby Beet and Goats Cheese Salad with Walnuts and Baby Spinach.
- 2 boxes baby beets, pressure cooked/baked till tender (Available at Natures Basket)
- 1 box baby spinach, washed and spun in a salad spinner (Available at Natures Basket)
- 50gm crumbly goats cheese
- 1 tbs balsamic vinegar
- 1 tbs extra virgin olive oil
- 1 tsp honey mustard
- 1 tbs red wine vinegar
- Coarse pepper and sea salt, to taste
Method:
- Mix together the dressing ingredients (items 4-8). From the mix, toss the spinach with 2 tbs of the dressing. Mix the remaining dressing with the baby beets.
- Arrange a platter with the spinach. Layer over the halved baby beets, crumble cheese and walnuts. Enjoy!
