I dream this sweet dream every [dreadful] Monday morning. In this dream, a fresh batch of espresso oatmeal cookies are cooling on a wire rack, next to a piping hot cuppa green tea, all whilst rain pitter patters down the queen’s necklace. And as you all know, dreams have no Mondays, or else they’d be nighmares! So here’s hoping my dreams come true, and with these cookies- you’re dreams definitely will! An amazing alternate to a breakfast, you can grab and go or sit all afternoon gobbling a plate full. The choice is yours!
Rain Clouds threatening over the Queen’s Necklace
 Makes about 2 dozen cookies (fromVegan Cookies Invade Your Cookie Jar)

Ingredients:
1.    1/2 zero fat milk
2.    1/2 cup canola/vegetable oil
3.    2 tbsp ground flax seeds
4.    1/3 cup brown sugar, tightly packed
5.    1/2 cup sugar
6.    1 tsp pure vanilla extract
7.    2/3 cup all-purpose flour
8.    1/4 tsp ground cinnamon
9.    2 tbsp instant espresso powder (I used Illy)
10.1 tbsp cocoa powder
11.3/4 tsp baking powder
12.1/4 tsp salt
13.1 3/4 cups quick-cooking oats
14.3/4 cup semi-sweet chocolate chips
Method:
  1. Pre-heat oven to 175*c and line two baking sheets with parchment paper. I swear by Silmat. I can’t imagine baking without them.
  2. Combine the first 6 ingredients in a large bowl and whisk until smooth (all the wet ingredients). Sift in the flour and add the next 5 ingredients and mix until smooth.
  3. Add the oats and chocolate chips and stir until everything is moist and combined.
  4. Place large tablespoons of dough 2″ apart on the baking sheets.
  5. Bake for 14 minutes, let cool for 5 minutes and then cool completely on a wire rack. Et voila!

Feedback:
1.       People can hardly believe that cookies per say and  especially cookies that taste as good as these and crumble as beautifully as these can be made without butter.
2.       Try and use any good quality coffee in this recipe- after all they are ‘espresso’ cookies first and foremost.
3.       I bought flax seeds at the local health shop and just ground them in the food processor. Super simple and made about a good cup full to last me through my baking spurts.
