Before we lose strawberry to yet another Indian summer, here’s a refreshing healthy way to incorporate some strawberries into the savoury part of dinner, or as a fresh and light lunch! Any person who ahs ready my blog even half a time would notice my obsession with strawberry, so it was only obvious that I would no longer be able to wait till the end of my meal to enjoy some of them rosy berries. Here’s a great salad with a twist!
Ingredients:
1. 2 cups of rocket, cleaned
2. 1 cup any other salad green
3. 1 cup strawberries, cleaned and halved
4. ½ cup cherry tomatoes, halved
5. 1/4th cup parmesan, grated
6. 2 tbs balsamic glaze
7. 1 tbs olive oil
8. Salt and freshly ground pepper, to taste
Method:
1. In a small bowl, mix together the olive oil and the seasoning and set aside.
2. Mix together the rocket, salad greens and cherry tomatoes. Throw over the strawberries, the Parmesan and squeeze over the balsamic glaze. Add the olive oil mixture, toss the salad and adjust seasoning to taste. That’s it, it’s really that simple!
Feedback:
1. You can make your own Balsamic Glaze, but it’s as easily available in any good grocery store.
2. You can replace the rocket for any other peppery salad green, like arugula.
3. Make sure to serve immediately, as the salad leaves will wilt after the dressings have been tossed in.
