Forgot the flowers? And the dinner reservation? Here’s the quickest possible solution to all your woes- everything you possibly already have at home! Without icing the cake is wonderful too, just sprinkle over some confectioners’ sugar and throw over some aphrodisiacal strawberries! And its low fat too- this just keeps getting better and better! Happy Valentine’s Day!
Ingredients (Adapted from Veganomincon, makes about 12 servings)
1. 1 3/4 cup freshly brewed coffee
2. 2/3 cup unsweetened Dutch-processed cocoa powder
3. 1 1/2 cups granulated sugar
4. 1/3 cup canola oil
5. 1/3 cup applesauce
6. 1/4 cup cornstarch
7. 2 tsps vanilla extract
8. 1 tsp almond extract
9. 2 cups all-purpose flour
10. 1 tsp baking soda
11. 1 1/2 tsp baking powder
12. 1/2 tsp Salt
13. 2 tsp confectioners’ sugar
Method:
1. Preheat oven to 175*c. Lightly grease an 8- or 10-inch Bundt pan.
2. Bring coffee to a gentle simmer over medium heat. Once it is simmering, reduce heat to low and whisk in cocoa powder until it is dissolved. Remove from heat and cool to room temperature.
3. In a mixing bowl, whisk together granulated sugar, oil, applesauce, and cornstarch until the sugar and cornstarch are dissolved (about 2 minutes). Mix in extracts. Once coffee/cocoa mixture is cool, gently whisk it in.
4. In a separate bowl, combine flour, baking powder, baking soda, and salt. Sift into wet ingredients and whisk until relatively smooth (about 2 minutes by hand).
5. Pour batter into prepared pan and bake for about 45 minutes, until a toothpick or knife inserted in centre comes out clean. For a smaller Bundt pan, it may take 55 minutes.
6. Remove from oven and let cool for about 20 minutes, then invert onto serving platter and cool completely. Sift confectioners’ sugar over the top of the cool cake.
Feedback:
1. I halved the recipe above and put it in a heart shaped cake tin for Valentines effect!
2. You can either dust with confectioners’ sugar or use any icing you like- its chocolate cake after all!
3. This cake is vegan and totally low fat!! Great for that binge.
