It’s been a while since I put up a new cupcake post—and this is because I finally received this book in the mail, packed with recipes for cupcakes that are going to alter cupcake making forever! Baked especially for my bestie’s Mad Hatter themed HIGH tea party, these little pearls of heaven were my contribution to the afternoon soiree. Enjoy this pseudo- photo essay!
Cupcake Ingredients:
1.       1/4 cup lime juice
2.       1 1/2 tsp lime zest
3.       1 cup milk
4.       1/4 cup vegetable oil
5.       2 tsp tequila
6.       1/2 tsp vanilla extract
7.       1 cup castor sugar
8.       1 1/3 cup all purpose flour
9.       1/4 tsp baking soda
10.   1/2 tsp baking powder
11.   1/2 tsp salt

Method:

1.       Preheat oven to 175*c. Fill a normal sized and a mini 12-cup muffin tin with liners.
2.       In a large bowl, mix together lime juice, lime zest, milk, oil, tequila, vanilla and sugar.
 
3.     In a small bowl, mix together sifted flour, baking soda, baking powder and salt. Add to lime mixture and stir until just combined. Divide evenly into muffin tins using an ice cream scooper for evenness.
 
4.       Bake for 20-24 minutes, until a toothpick comes out clean
 
5.    Leave in tin out onto a wire rack to cool for a few minutes, and then remove and leave to cool completely before frosting.
 
Tequila and Lime Frosting Ingredients:
1.       1/4 cup butter, softened
2.       1 tbsp milk
3.       3 tbsp lime juice
4.       1 tbsp tequila
5.       2 cups confectioners’ sugar
6.       ½ tsp coarse salt, for the margarita effect
7.       Coloured sugar for decoration
8.       A drop of green food colouring
Method:
  1.  Cream together butter, milk, lime juice, tequila, and 2 cups of confectioners’ sugar and the food colouring. Add in more sugar as needed to make frosting stiff. Place in fridge for 30 minutes to help stiffen a bit, for ease in frosting.
2.      Spread on cupcakes and roll the edges in a small amount of coarse, coloured sugar.
3.      Dig in!
Feedback:
1.      Most seemed to enjoy the idea of non-conventional adult cupcakes.
2.      I would keep these in a cool environment, or even the refrigerator as they tend to sweat outdoors.
3.    You can decorate with slices of lemon, wedges of lemon, etc. Use green or yellow liners to further the theme!

    Well, let me just say, this was by far, the most wonderful and delightful part of my birthday. Trust Puj to put together the perfect cupcake!

    Whats a HiGH-Tea without some of these guys…
