Oat + Nut Cookies {VG} {GF} {SF} and seriously YUM!

As a mum of a toddler, I like to make stuff that even Baby Doll can eat, along with us, or else I inevitably get guilted into giving her morsels of goodies what we eat and she should technically NOT be indulging it, quite yet at least! To tackle this, I’ve come up simple yet effective meals for her and us, that actually taste great to all palates of all ages. Some examples are: grated carrot salad with an orange juice dressing, tomato basil salad with some extra virgin olive oil salt and pepper, asparagus risotto (without the wine, of course!), grilled paneer with lime and coriander, whole wheat spaghetti pomodoro, guacamole sans the jalepeno – you get the drift! Fruit & Nut Chocolate Slab (without the extra calories!)

Yes, its true. Chocolate can save the world, one tongue at a time. And my quick and easy recipe combines fruit and nut mix with semi sweet chocolate, perfectly forming a Fruit & Nut Chocolate Slab (without the extra calories!). Remember, because I use semi sweet chocolate, I am effectively lowering the calorie count, and by adding nuts and dried fruit – we counter the bitterness of the chocolate with a hullabaloo of a mixture of chewy, crunchy and crispy! Now I do not obviously advise eating slabs by the handful, rather having a 1 or 2″ square would be enough to give you your kick of sugar, without the unnecessary guilt!

Brown Butter Apple Crisp

I can never imagine having reached where I have in my culinary journey without having simple and effective recipes like this one, in my arsenal. My Brown Butter Apple Crisp has been labelled an apple crumble, has been made with peaches, with almond & strawberries, and with mixed fruit. It’s gone through a bevy of avatars, adding some cinnamon, nutmeg, all spice, brown butter, almonds, hazelnut, walnut, raisins. You get the gist.

The reason I love this particular version is not only because it is simple (it is, really simple!) but also because I adore crumbles/crisps that use oats in the topping, and not only flour. Granola Bar Goodness

I am actually a little surprised at myself for not putting up a post using my OCD ingredient of strawberries. Firstly, because despite not posting about it or taking pictures and spamming my instagram feed, I actually did already use strawberries a few times already. The first was in a boozy strawberry jalepeno margarita, followed by this gorgeous Valrhona Bundt cake with the centre piled high with fresh fresh strawberries. After that, there was the baby spinach and roquette salad with fresh strawberries, blushing tomatoes, crumbled goats cheese in a balsamic vinaigrette dressing.

Instead of any of those – we have these super amazing energy filled tasty granola bars.

Now truth be told, I’ve made granola bars before, and absolutely loved them. It is strangely comforting having control over what actually goes into your health bars, instead of the processed and sugar loaded store-bought varieties available out there. The other option is to purchase granola clusters or bars from home bakers at the various pop-ups, farmers markets and food events around town, but I definitely feel that those versions are unregulated and there is actually no real way to verify the ‘healthy’ sticker they come with.
